Having Louisiana be my roots and visiting the south at least twice a year, you may or may not understand where I am coming from when I explain what delicious comfort brings to the soul when I say crispy southern fried chicken. Having fried chicken for breakfast, Lunch,or Dinner is perfect hot or cold with that crispy element that satisfies anytime of the day or night.
In my family it's a tradition to always serve on special occasions a platter of staggeringly outstanding fried chicken, always a favorite yet super simple recipe with flavors that never fails to shine through.
TIME: 25 MINS
- Canola oil, for frying
- 1 cup flour
- Kosher salt and freshly ground black pepper to taste
- 1 whole chicken cut up
Heat 2 inches of oil in a 6 quart saucepan over medium heat until a deep fry thermometer reads 350 degrees. place flour in a large bowl, season with salt and pepper set aside. Generously season chicken all over with salt and pepper. Dredge chicken pieces in flour shaking off excess. Place in oil and fry, turning occasionally until chicken is cooked through and dark brown. 15 min. For white meat, 20 min. For dark meat. Drain on paper towels and let cool 5 min. Before serving. Enjoy.
